School is out and it’s officially June! Summer might be one of our best seasons in Michigan, and it surely is our favorite at Jerico. From walks in the alleyway gardens, iced lattes at the cafe, and tons of events on the calendar - it’s a special time to slow down and give us a visit during the year.

This summer, instead of going out for evening drinks - try your hand at making some homecrafted, foraged cordials! Jerico resident Angie Jackson of Elixir House, is an expert on kitchen witch recipes like those in her self-published books “Drink The Wild” and “Bittered The Wild”. Angie creates recipes “for the spirited and sober soul”. In her latest blog, she features history, insight, and the recipe for “The Forest Sprite Cordial”. Read an excerpt here:

The Forest Sprite Cordial: A Sustainable Twist on Foraged Cordials

There is a specific magic to white pine. In the depths of winter or the burst of spring, those soft, silvery needles carry a flavor profile that is surprisingly tropical—think resinous citrus with a whisper of vanilla.

Commonly, foragers turn this into a "wild soda" through natural fermentation. But fermentation is a fickle friend; it’s alive, it’s bubbly, and it has a shelf life of about five minutes before it turns into pine-flavored vinegar.

Enter the Forest Sprite Cordial. By marrying the forager’s harvest with the mixologist's technique, I have created a shelf-stable, high-impact syrup that captures the woods in a bottle.

The word "cordial" comes from the Latin cordialis, meaning "of the heart." In the 15th century, these were medicinal tonics believed to invigorate the spirit and settle the body. Eventually, the line between "medicine" and "refreshment" blurred.

Jerico

Jerico is a community of creative entrepreneurs, makers, and artists founded by Krystal and Jeb Gast in 2014. Located in three historic buildings at the industrial edge of the Edison neighborhood in Kalamazoo, MI, the community is home to 23 shared and individual studio spaces currently occupied by a broad range of creative operations, including fine artist studios, an industrial design agency, video and music production studios, a rentable photography studio, coffee shop, yoga studio, tattoo shop and more.

We work to provide physical space and other opportunities to creatives and artists in Southwest Michigan. Our workshops, faire’s, art gallery, and private resident studios provide unique opportunities to the greater Kalamazoo community for artistic and creative experiences. Come see it for yourself!
